This is my mother-in-law’s salad that Laurie posted a while ago. I made this salad for Heather’s baby shower and changed the name to “Green Envy Salad” for purposes of fitting in with the theme. Everyone loved this salad and I loved how easy it was to make.

This is my favorite way to make a pot roast because I don’t need to make any gravy. I don’t mind making gravy, but this just takes away that extra step.
